Fisherman's Bouillabaisse
Fisherman's Bouillabaisse is a hearty low fat, low carbohydrate meal that not only is delicious but is good for you.

Ingredients:

  • 2 Tablespoons olive oil
  • 2 Tablespoons butter or margarine
  • 1 large onion, chopped
  • 1 small clove garlic, minced
  • 16 0z. can of tomatoes
  • 2 cups of water
  • 8 oz jar of clam juice
  • 1/2 teaspoon saffron shreds
  • 1/8 teaspoon dried thyme
  • 2 bay leaves
  • 2 pounds any fish, cut up and bones removed
  • 6 cups water
  • 7.5 oz. can minced clams or 1/2 lb fresh
  • 7.5 oz. can crab meat, or 1/2 lb fresh picked over to remove shells
  • 4.5 oz. can shrimp, or 1/2 lb fresh cleaned and deveined


  • Heat oil and butter or margarine in a large pot; add onion and garlic and sauté until tender. Add canned tomatoes, 2 cups of water, clam juice, saffron shreds, dried thyme, and bay leaves. Simmer for 10 minutes. Add fresh fish along with 6 cups of water. Continue to simmer for 5 minutes, add clams, crab meat, and shrimp. Let simmer another 5 minutes. Finish by adding pepper to taste.

    This is a very versatile recipe so use whatever fish you catch, or whatever your fishmonger has on sale.
