Apple & Almond Soufflé
This is a very light dessert, that is delicious and easy to make.
Ingredients:
3 medium apples, peeled, cored and chopped into pieces
1/4 Cup water
3 Tablespoons of sugar substitute
1/2 teaspoon of almond extract
5 Egg whites
1/2 Cup of sliced almonds, toasted (optional)
In a two quart saucepan, combine apples and water. Bring to a boil over high heat. reduce heat to low, cover and simmer for 10 minutes, stirring occasionally until apples are tender. Stir in sugar substitute and almond extract. Remove from heat and cool in refrigerator for 10 minutes.
Preheat over to 425 degrees.
In a large bowl, with an electric mixer on high, beat the egg whites until stiff peaks form. With a rubber spatula, fold into the cooled apple mixture. Spoon the mixture into a one and a half quart soufflé dish. Sprinkle with almonds and serve warm.
This recipe has approximatly 150 calories, 25 grams of carbs and 3.5 grams of fat per serving. The almonds provide the healthy fat content.
