Delicious Low Carb, Sugar Free Pickled Eggs


If you like pickled eggs, you are going to love these. My wife has been making them for years and what is so great about them is not only are they delectable but they have no sugar and less than 1 gram of carbohydrates per serving. (Estimated) This is a snack that will fit into most all diets especially for someone who has diabetes and is eating low carbs, sugar free foods. The only drawback to this recipe is that it takes a couple of days of soaking for the eggs to fully absorb the pickling brine but the end taste far outweighs the wait.

Ingredients:
  • 3 Cups white vinegar
  • 1 Cup Water
  • 3 Tablespoons of Splenda or favorite sugar substitute (If you are not avoiding sugar, add it instead of the substitute)
  • 1 Tablespoon of pickling salt
  • 1 Dozen pealed hard boiled eggs (Depending on the container you use, you probably will be able to add more eggs. I add as many eggs as my container will hold making sure that all of them are fully covered by the pickling brine)


  • Mix all ingredients together and pour into a large clean glass jar or similar container. Add the hard boiled eggs and you're done!

    Place in refrigerator and let set for two days. (If you're antsy to taste one you can try an egg after a 24 hour soak but they are at their best in 48 hours.)

    These are a great mid morning or afternoon snacks. You can put them in a plastic sandwich bag and take them to work with you or send them to school in your children's lunches.
