Lemon Bars are so refreshing anytime of year. It has always been one of my favorites and I have recently been informed that 3 of my 5 granddaughters like lemom, the other two are still learning their words, so I decided lemon bars it is. Anytime you work with fillings or custards many cooks shy away from the recipe. There is really no reason for this, it’s not as hard as you might think. Here is what you need:

FOR THE CRUST

1 cup butter (2 sticks)

1 cup sugar

2 cups flour

1 1/4 cups oatmeal (not instant)

FOR THE FILLING

1/2 cup flour

1/2 teaspoon baking powder

4 eggs, beaten

2 cups sugar

1/2 teaspoon grated lemon rind

1/2 cup lemon juice

Cream butter and sugar, then add the flour and oats to make a dough ( it will be a little dry). Spray a 9 x 13 inch pan and using your fingertips press the dough into the pan evenly. Bake at 350 degrees for 20 or 25 minutes or until lightly browned.

Combine 1/2 cup of flour and baking powder, set aside. Combine eggs, sugar, lemon rind, and lemon juice; stir well. Stir dry ingredients into egg mixture, and pour over baked crust.

Bake at 350 degrees for 25 minutes or until lightly browned and set. Cool on a wire rack, dust with powdered sugar and cut into bars.

That is all ther is to it. I usually jiggle the pan to check if the filling has set while still in the oven. If it has not set leave it baking and check every few minutes, but keep a good eye on it. I made these over Easter weekend and they were gone before I knew it. I guess the girls do like lemon.
