This is one of my most favorite recipes. It uses cauliflower instead of potatoes but done properly you will have a hard time telling the difference. You will not believe how many people you can fool with this recipe. It looks like mashed potatoes, it tastes like mashed potatoes but unlike potatoes it is low in carbohydrates and healthy to eat. You will love it!

Ingredients:

  • 4 cups of cauliflower florets
  • 1 oz fat free half-and-half
  • 2 tablespoons fat free or reduced fat sour cream. (Trans fat free butter can be substituted for the sour cream)
  • Pinch of salt
  • Pinch of pepper
  • Steam cauliflower until crisp and tender. (about 7 to 8 minutes) Puree in a food processor, adding the sour cream and half-and-half. Season with salt and pepper.

    That’s it! The cauliflower will be creamy and taste like mashed potatoes. You can eat plain or make low fat gravy to pour on it. This is the perfect healthy substitute for those who love mashed potatoes but cannot eat them.
