Below is a delicious fajita recipe that is low in fat and has very few carbohydrates. These fajitas are perfect for a diabetic as well as someone who is following a low carb, low fat diet such as the South Beach diet. This recipe is quick, easy, healthy and best of all scrumptious.

Ingredients:

  • 1 lb boneless chicken breasts
  • 1 medium onion (sliced)
  • 1 cup soy sauce
  • 2 tablespoons of sugar free sweetener such as Splenda
  • Ice Berg Lettuce leaves
  • Low fat grated cheese
  • Black pepper
  • Fry chicken breast in pan in 2 tablespoons of extra virgin olive oil. Season with pepper.
    When breasts are fully cooked remove from pan and set aside to cool.

    Add to the same pan you cooked the chicken in, soy sauce, sweetener, and onion slices.
    Reduce heat on stove to medium and sauté onions until tender, (Approximately 3 minutes)
    While onions are cooking take your chicken breasts and slice them into ½ inch thick strips.

    Add the chicken back to the pan and stir to coat chicken with sauce. Let simmer for 5 to 10 minutes.

    Remove pan from burner and set aside. Take a lettuce leaf and fill with mixture from pan and add cheese. Wrap lettuce around mixture and secure with toothpicks. That’s it!

    You can also add these other ingredients and still keep it healthy:

  • Chopped tomatoes
  • Chopped olives
  • Salsa or Pacante sauce
  • Chopped avocadoes
  • Guacamole
  • Low fat or non-fat sour cream
  • Chopped green peppers
  • This recipe will feed 3 to 4 people. However it is so delicious and healthy that I suggest you double it, if you plan on feeding 4 as everyone will want multiple fajitas.
