the menu for breakfast during the Christmas season this year. Our granddaughter will be spending more than one day with us and it is always nice to surprise her with something new to eat. She is not really a picky eater, she just knows what good food is. On the other hand, at 14 she is still a little shy but she sure will let me know if what is being served isn’t up to par. I have always said I should would hate to be her boyfriend taking her to dinner.

We all had a good laugh not long ago when during dinner I asked “when you get a boyfriend and he ask you out to dinner where are you going to go?” Without any thought at all her reply was “Grammy’s”

This isn’t your boxed pancake mix but really isn’t as difficult as it seems. You probably already have everything on hand, so let’s get started. I don’t think there is anything worst than waiting for an oven to heat up so I start with preheating the oven to 425 degrees.

Dutch Apple Pancake

for the Batter:

4 eggs

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/2 cup milk

1 teaspoon vanilla

2 Tablespoon butter, melted

1/8 teaspoon cinnamon

for the Filling:

2 Tablespoons butter

1 large tart apple, pared and sliced 1/4 inch thick

1/2 teaspoon cinnamon

and the Glaze:

1/4 cup sugar

1/2 teaspoon cinnamon

3 Tablespoons boiling water

Using a food processor combine all batter ingredients and mix until smooth. Let rest 30 minutes. For the filling melt butter in a 10 inch oven-proof skillet. Add the sliced apple and sprinkle with cinnamon. Cook over low heat for about 3 minutes. Pour batter over apples and place in preheated 425 degree oven for 15 minutes. Reduce heat to 350 degrees and continue to bake for 15 minutes. Remove from oven. Blend glaze ingredients and drizzle over top of pancake. The only thing left to do is cut into 4 wedges and enjoy.
