Peacan Pie is just the ticket for something special during the holidays, not only for you and your guests but it helps dress the table to that next level of goodness.

I’m not a collector of recipes but I do have several for Pecan Pie. What I usually do is mix and match until I come up with the results I’m looking for. This recipe needed one little change and became an immediate hit with everybody.

Let’s get started. You’ll need . . .

1 cup white corn syrup

1 cup dark brown sugar

1/3 cup melted butter

1 teaspoon vanilla

3 whole eggs, slightly beaten

1 1/2 cups shelled pecans

Mix syrup, sugar, butter, and vanilla. Mix in slighly beaten eggs. Pour into a 9 inch unbaked pie shell. Sprinkle pecans over filling. Bake in a 350 degree oven for approximately 45 minutes. I use a wire whisk as opposed to a mixer so the filling doesn’t get full of air.

The only thing you need now is to make sure you have saved room for dessert (and maybe a little vanilla ice cream).

I have a sister, Fran and her husband Bill, who lives in Albuquerque, NM. We don’t get the chance to visit very often, but last time we were together she mentioned that she and her lady friends did like pecan pie.
