What is a person to do when the cucumber plants just keep producing.
You have had them about every way you could think about by now,
except maybe one. Here is a soup that is meant to be served during the
hot summer days. Even with the cool whether we had this weekend there
is still a lot of hot days ahead.
You’ll need 1 cup milk
1 medium cucumber, peeled, seeded, and diced
2 cans condensed cream of potato soup
1 cup heavy cream
Place cucumber and milk into blender and blend until cucumber is finely
minced. Add one can of soup and blend. Pour half of this mixture into a
bowl. Add the remaining can of soup to the mixture in the blender and
blend. Pour the second half of mixture in the bowl and add the cream.
With a spoon or whisk, mix well. Chill thoroughly. Garnish with course
black pepper or fresh chopped chives before serving.
