It’s that time of year again when the early vegetables are on a
growing spurt. It’s one of the best seasons based on this alone.
All the rain we’ve had recently sure has helped. The bib lettuce,
endive, and Romaine are all in full swing along with the carrots,
radish, and fresh herbs.
One of my favorite summer meals is a nice chef salad. The body
of the dish is made of fresh greens. I sandwich thin sliced ham
between two slices of smoked gouda cheese and julienne. Placed
on top of the greens I then add a sliced hard boiled egg onto the
cheese and ham and garnish with tomatos.
Now for the best part. Below is the recipe for the best blue
cheese salad dressing you’ll ever have.
Mix with a whisk:

Fold the blue cheese in, being careful not to break the chunks.
I buy this already crumbled. Use high quality cheese and this is
sure to become a favorite. Whatever might be left , place in a
jar and store in the frig.
